This exotic, citrusy eclair has a crusty choux pastry exterior with a tender airy interior filled with citron crème (lemon cream), glazed with a yuzu flavored icing, and decorated with crunchy, mini Swiss meringues and streusel cookies. The yuzu, a Japanese fruit, is like the Asian cousin of the lemon—tart, yet more similar in taste to a grapefruit combined with a mandarin orange.
